How To Make Vanilla Bean Creme Brulee

A classic French dessert with a twist of vanilla bean flavor and a caramelized sugar crust.

Serves:

Ingredients

  • 2 cups of heavy cream
  • 1/2 vanilla bean
  • 4 egg yolks
  • 1/3 cup of granulated sugar, plus 1 tablespoon

Instructions

  1. Preheat oven to 325°F.

  2. In a medium-sized saucepan, heat heavy cream and vanilla bean (scraped and seeds added to the cream) over medium heat.

  3. In a separate bowl, whisk together egg yolks and granulated sugar until pale yellow.

  4. Slowly pour hot cream mixture into egg mixture, whisking constantly.

  5. Strain mixture through a fine-mesh sieve and divide evenly into 4 ramekins.

  6. Place ramekins in a baking dish and fill with hot water halfway up the sides of the ramekins.

  7. Bake for 35-45 minutes or until set around the edges but still slightly jiggly in the center.

  8. Remove from oven and let cool, then refrigerate for 2 hours or until fully chilled.

  9. Before serving, sprinkle 1 tablespoon of granulated sugar over each creme brulee and caramelize with a kitchen torch or under a broiler.
