
How To Make Mini Chocolate Chip Greek Yogurt Cookie Bites
These mini Greek yogurt cookie bites are sweetened naturally and packed full of protein. It is easy to bake and guaranteed to be your new favorite.

Ingredients
- ¼cupcoconut oilnot melted
- ½cupbrown sugaror coconut sugar
- ¼cupcaster sugaror superfine sugar
- 1largeegg
- 1tsppure vanilla extract
- ¼cupGreek yogurtfull fat natural
- 1cupflourall purpose
- ¼tspsalt
- ¼tspbaking soda
- â…“cupmini chocolate chipsdivided
- Sea salt flakes
Instructions

Using a hand mixer, beat together the oil and sugars until combined. Add the egg and vanilla and beat until light and fluffy. Mix in the yogurt until combined.

Make a well in the center of your wet mix; add the flour, salt, and soda into the center; mix the dry ingredients together first to combine them before mixing them through the wet ingredients.

Mix until just combined and fold through 1/4 cup of the chocolate chips.

Refrigerate until firm for a minimum of three hours or overnight.

When you’re ready to bake, preheat the oven to 350 degrees F.

Scoop and roll the cookie dough into balls and place onto a baking tray lined with baking or parchment paper.

Press a few more chocolate chips over the tops of each cookie with the remaining chocolate chips and bake for 8 to 10 minutes or until cookies are nice and golden in color.

Allow cooling onto a cooling rack for 5 to 10 minutes. Sprinkle with sea salt flakes if desired.
