  • 2 egg whites
  • 1/2 cup of granulated sugar
  • 1/2 tsp of vanilla extract

Instructions

  1. Preheat oven to 225°F (110°C). Line a baking sheet with parchment paper.

  2. In a clean, dry bowl, whisk the egg whites with an electric mixer until foamy.

  3. Gradually add the sugar while continuing to whisk on high speed until stiff peaks form.

  4. Gently fold in the vanilla extract.

  5. Transfer the meringue mixture into a piping bag fitted with a star tip.

  6. Pipe small dollops of meringue onto the prepared baking sheet, leaving some space between each cookie.

  7. Bake for 90 minutes or until the meringue cookies are dry and crisp.

  8. Remove from the oven and let cool completely before serving.
