Ingredients

  • 4 egg whites
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup cherries, pitted and halved
  • 1 cup apricots, sliced
  • 1 cup peaches, sliced
  • 1/2 cup pistachios, chopped
  • Whipped cream, for serving

Instructions

  1. Preheat the oven to 200°F (95°C). Line a baking sheet with parchment paper.

  2. In a clean, dry mixing bowl, beat the egg whites with an electric mixer on medium-high speed until foamy.

  3. Gradually add the sugar while continuing to beat until stiff peaks form. Mix in the vanilla extract.

  4. Spoon the meringue mixture into a piping bag fitted with a round tip. Pipe 2-inch (5 cm) circles onto the prepared baking sheet.

  5. Bake the meringues for 2 hours, or until they are crisp and dry. Allow them to cool completely on a wire rack.

  6. In a separate bowl, combine the cherries, apricots, peaches, and pistachios.

  7. To assemble the meringue stack, place a meringue disc on a serving plate. Spoon a layer of the fruit and nut mixture over the meringue. Repeat the layers, finishing with a meringue disc on top.

  8. Serve the cherry, apricot, peach & pistachio meringue stack with a dollop of whipped cream.
