How To Make Cherry, Apricot, Peach & Pistachio Meringue Stack

- 4 egg whites
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 1 cup cherries, pitted and halved
- 1 cup apricots, sliced
- 1 cup peaches, sliced
- 1/2 cup pistachios, chopped
- Whipped cream, for serving

Preheat the oven to 200°F (95°C). Line a baking sheet with parchment paper.

In a clean, dry mixing bowl, beat the egg whites with an electric mixer on medium-high speed until foamy.

Gradually add the sugar while continuing to beat until stiff peaks form. Mix in the vanilla extract.

Spoon the meringue mixture into a piping bag fitted with a round tip. Pipe 2-inch (5 cm) circles onto the prepared baking sheet.

Bake the meringues for 2 hours, or until they are crisp and dry. Allow them to cool completely on a wire rack.
