Serves:
Ingredients
- 1.5 pounds stewing beef, cubed
- 1 tablespoon olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 8 ounces mushrooms, sliced
- 1 cup gluten-free beef broth
- 1 tablespoon Worcestershire sauce
- 1 sprig fresh rosemary
- 1 sprig fresh thyme
- 1 cup gluten-free all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 4 tablespoons unsalted butter
- 1/2 cup milk
Instructions
-
Preheat the oven to 325°F (160°C).
-
Heat the olive oil in a large oven-safe pot over medium-high heat. Add the beef and cook until browned on all sides. Remove the beef and set aside.
-
In the same pot, add the onion, garlic, carrots, celery, and mushrooms. Cook until the vegetables are softened.
-
Return the beef to the pot. Add the beef broth, Worcestershire sauce, rosemary, and thyme. Bring to a boil, then cover and transfer to the preheated oven. Cook for 1.5 hours or until the beef is tender.
-
In a bowl, combine the gluten-free flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the milk until a dough forms.
-
Remove the pot from the oven and drop spoonfuls of the cobbler dough on top of the beef mixture. Return the pot to the oven and cook for an additional 20 minutes or until the cobbler is golden brown.
-
Serve the gluten-free beef cobbler warm.
