  • 2 ripe bananas, mashed
  • 1/4 cup tahini
  • 1/4 cup honey
  • 1/4 cup melted coconut oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.

  2. In a large bowl, combine the mashed bananas, tahini, honey, melted coconut oil, eggs, and vanilla extract. Mix well.

  3. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.

  4. Gradually add the dry ingredients to the banana mixture, stirring until just combined.

  5. Pour the batter into the prepared cake pan and smooth the top with a spatula.

  6. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

  7. Remove from the oven and let cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.

  8. Slice and serve the delicious Tahini Banana Cake.
