How To Make Mini Chocolate Icebox Cake
Indulge your taste buds with a sweet serving of this icebox cake, made with layers of wafer cookies and fluffy whipped cream, for a tastier dessert!
- 4cupsheavy whipping cream
- ⅓cuppowdered sugar
- 1pkgchocolate wafers,such as Famous wafers
- chocolate,optional, for decorating
Combine the heavy cream, powdered sugar, and vanilla in a large bowl. Whip on medium speed until fluffy and thick.
Layer 6 wafer cookies with about 1 tablespoon of whipped cream between each layer. Begin and end with a wafer cookie, so there will be 6 cookies and 5 layers of whipped cream.
Repeat with the remaining cookies. If desired, frost the outer edges of the cookies with whipped cream.
Place the mini cakes in the refrigerator for at least 4 hours or overnight.
Serve, and enjoy!
If desired, use a vegetable peeler to “peel” chocolate shavings to decorate. Colored or chocolate sprinkles work as well.
