How To Make Christmas Eggnog Cake

Take the creaminess of the ‘nog and turn it into a cake by combining eggs and yogurt together for this Christmas treat. Make this eggnog cake at home.

Ingredients

  • 16.5ozpackage yellow cake mix
  • 6ozfat-free Greek yogurt
  • 1cupwater
  • 2large egg whites
  • tspground nutmeg,plus more for garnish
  • baking spray

For the Rum Topping:

  • 10ozTruwhip,or reduced fat whipped topping
  • 1tbsprum,or a few drops rum extract

Instructions

  1. Preheat oven to 350 degrees F.

  2. Lightly spray a 9×13-inch baking pan with baking spray.

  3. Combine all the cake ingredients in a large mixing bowl and beat until combined.

  4. Pour into prepared baking pan and bake about 28 to 30 minutes, or until a toothpick inserted comes out clean.

  5. Allow to cool before frosting.

  6. For frosting, in a small bowl, whisk whipped topping with rum or rum extract.

  7. Spread over cake and dust with more nutmeg.

  8. Keep refrigerated if making this ahead or keep whipped topping in the refrigerator and serve on the side.
