This simple bishop’s bread recipe is the perfect staple for a back-up dessert. It’s very easy to make and can be ready in just half an hour! You can even add chopped nuts and/or dried fruit to the batter if you like.

Bishop’s Bread Coffee Cake Recipe

  • 2 ½ cups all-purpose flour
  • 2 cups brown sugar firmly packed
  • 1/2 tsp. salt
  • 1/2 cup shortening
  • 1 tsp. baking powder
  • 3/4 cup sour milk
  • 1 egg
  • 1/2 tsp. baking soda
  • 1 tsp. cinnamon plus extra for topping (optional)


  1. Mix flour, sugar, salt and shortening. Reserve 3/4 cup of this mixture for top crumbs.

  2. Add remaining ingredients. Beat briskly until batter is smooth.

  3. Pour into two greased 9-inch pie plates and scatter reserved crumbs over top.

  4. Bake at 350 degrees for 25-30 minutes. Let cool and serve with extra cinnamon sprinkled on top if desired.
