This simple bishop’s bread recipe is the perfect staple for a back-up dessert. It’s very easy to make and can be ready in just half an hour! You can even add chopped nuts and/or dried fruit to the batter if you like.

Ingredients

  • cups all-purpose flour
  • 1 cup brown sugar
  • 1 tsp salt
  • ½ cup unsalted butter, at room temperature
  • 1 tsp baking powder
  • 1 cup milk
  • 2 eggs
  • ½ cup almond flakes, or pecans, roasted
  • cooking spray

For Streusale Topping:

  • ½ cup granulated sugar
  • ½ cup all-purpose flour
  • ¼ cup unsalted butter, at room temperature
  • 1 tbsp ground cinnamon

Instructions

  1. Preheat your oven to 360 degrees F and grease a springform cake tin with cooking spray.

  2. Sift together flour, salt, and baking powder. Set aside.

  3. Pour into two greased 9-inch pie plates and scatter reserved crumbs over top.

  4. In a mixing bowl, combine all ingredients for the streusel topping. Mix until crumbly and set aside.

  5. In another mixing bowl, cream together sugar and butter until pale.

  6. Add milk and eggs. Continue creaming until incorporated.

  7. Fold in sifted flour mixture and almond flakes into your butter mixture until evenly incorporated.

  8. Transfer your cake batter into your cake tin then sprinkle your streusel topping on top. Lightly tap to release any air bubbles and transfer to the oven.

  9. Bake for 25 to 30 minutes, or until your cake tester comes out clean.

  10. Once done, transfer onto cooling racks and cool down completely. Portion accordingly and serve.
