This bishop's bread recipe is more like a cake rather than actual bread. It has a light cinnamon flavor that goes perfectly with a cup of tea or coffee.

Ingredients
- 2¾ cups all-purpose flour
- 1 cup brown sugar
- 1 tsp salt
- ½ cup unsalted butter, at room temperature
- 1 tbsp baking powder
- 1 cup milk
- 2 eggs
- ½ cup almond flakes, or pecans, roasted
- cooking spray
For Streusel Topping:
- ½ cup granulated sugar
- ½ cup all-purpose flour
- ¼ cup unsalted butter, at room temperature
- 1 tbsp ground cinnamon
Instructions
- Preheat the oven to 360 degrees F and grease a springform cake tin with cooking spray.
- Sift together flour, salt, and baking powder. Set aside.
- Pour into two greased 9-inch pie plates and scatter reserved crumbs over top.
- In a mixing bowl, combine all ingredients for the streusel topping. Mix until crumbly and set aside.
- In another mixing bowl, cream together sugar and butter until pale.
- Add milk and eggs. Continue creaming until incorporated.
- Fold in sifted flour mixture and almond flakes into the butter mixture until evenly incorporated.
- Transfer the cake batter into the cake tin, then sprinkle the streusel topping on top. Lightly tap to release any air bubbles and transfer to the oven.
- Bake for 25 to 30 minutes, or until the cake tester comes out clean.
- Once done, transfer onto cooling racks and cool down completely. Portion accordingly and serve.
