- 1 tsp salt
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 3/4 cup vegetable oil
- 1 1/2 cup granulated sugar
- 3 large eggs
- 1 1/2 tsp vanilla extract
- 2 tart apples (e.g. Granny Smith), about 8 oz. each; peeled, cored, and cut into 1/2 inch chunks (about 3 cups)
- 1 cup chopped pecans
For Caramel Glaze:
- 1/2 cup butter or margarine
- 1 cup light brown sugar, firmly packed
- 1/4 cup milk
- Softly whipped heavy cream , optional
- cinnamon, optional
Instructions
-
Heat your oven to 350 degrees Fahrenheit. While your oven warms up, grease 13x9x2 inch baking pan.
-
In a medium-sized bowl, stir the flour, salt, baking soda, and cinnamon to mix well. Afterward, set aside.
-
In a large bowl, using an electric mixer at medium speed, beat the oil, granulated sugar, eggs, and vanilla for 3 minutes.
-
Stir in the flour mixture just until it moistens. Once that's done, fold in the apples and pecans then spoon the batter into the greased pan.
-
Bake the batter in the oven for 50-55 minutes until a wooden pick inserted in the center comes out clean. Once you're done baking, remove the cake from the oven then allow it to set on a wire rack.
-
In a 1 quart saucepan over medium-high heat, bring the butter, brown sugar, and milk to a boil. Keep stirring until the sugar melts then boil for 1 minute. Afterward, spoon half of the glaze over the cake and let it stand for 5 minutes. Store the remaining glaze for later use.
