Ingredients

For Cake:

  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 3/4 cup vegetable oil
  • 1 1/2 cup granulated sugar
  • 3 large eggs
  • 1 1/2 tsp vanilla extract
  • 2 tart apples (e.g. Granny Smith), about 8 oz. each; peeled, cored, and cut into 1/2 inch chunks (about 3 cups)
  • 1 cup chopped pecans

For Caramel Glaze:

  • 1/2 cup butter or margarine
  • 1 cup light brown sugar, firmly packed
  • 1/4 cup milk
  • Softly whipped heavy cream , optional
  • cinnamon, optional

Instructions

  1. Heat your oven to 350 degrees Fahrenheit. While your oven warms up, grease 13x9x2 inch baking pan.

  2. In a medium-sized bowl, stir the flour, salt, baking soda, and cinnamon to mix well. Afterward, set aside.

  3. In a large bowl, using an electric mixer at medium speed, beat the oil, granulated sugar, eggs, and vanilla for 3 minutes.

  4. Stir in the flour mixture just until it moistens. Once that's done, fold in the apples and pecans then spoon the batter into the greased pan.

  5. Bake the batter in the oven for 50-55 minutes until a wooden pick inserted in the center comes out clean. Once you're done baking, remove the cake from the oven then allow it to set on a wire rack.

  6. In a 1 quart saucepan over medium-high heat, bring the butter, brown sugar, and milk to a boil. Keep stirring until the sugar melts then boil for 1 minute. Afterward, spoon half of the glaze over the cake and let it stand for 5 minutes. Store the remaining glaze for later use.
