How To Make Tunisian Couscous Recipe

Ingredients

  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp coriander
  • ½ tsp turmeric
  • 1 cup chicken broth
  • 1 can chickpeas, drained
  • 2 carrots, chopped
  • 2 zucchinis, chopped
  • 1 red bell pepper, chopped
  • 2 cups cooked couscous
  • Salt and pepper

Instructions

  1. Heat olive oil in a skillet over medium heat.

  2. Add onion and garlic, fry until soft.

  3. Add cumin, paprika, coriander, turmeric and salt. Cook until fragrant.

  4. Stir in chicken broth, chickpeas, and vegetables. Bring to boil. Reduce heat, cover and simmer for 30 minutes

  5. Add salt and pepper for taste.

  6. Serve couscous with the vegetable mixture.
