Ingredients

  • 1 lb lamb, cut into cubes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, peeled and chopped
  • 2 potatoes, peeled and chopped
  • 1 can chickpeas, drained and rinsed
  • 2 tbsp tomato paste
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1/2 tsp cinnamon
  • 1/2 tsp turmeric
  • salt and pepper to taste
  • 3 cups water
  • 1 tbsp olive oil

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the lamb and cook until browned on all sides.

  2. Add the onion and garlic to the pot and cook until softened.

  3. Stir in the carrots, potatoes, chickpeas, tomato paste, and spices. Season with salt and pepper.

  4. Add the water to the pot and bring to a boil. Reduce the heat to low, cover, and simmer for 1-1/2 hours or until the lamb is tender.

  5. Serve hot with crusty bread or over steamed couscous.
