  • 2 chicken breasts, sliced
  • 2 tablespoons yellow curry paste
  • 1 can (14 oz) coconut milk
  • 1 onion, thinly sliced
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • Juice of 1 lime
  • Fresh cilantro, for garnish
  • Cooked rice, for serving

Instructions

  1. In a large pan or wok, heat some oil over medium heat. Add the chicken and cook until browned.

  2. Push the chicken to the side of the pan and add the curry paste. Cook for about a minute until fragrant.

  3. Stir in the coconut milk, onion, bell pepper, and zucchini. Bring to a simmer and let cook for about 10 minutes until the vegetables are tender.

  4. Stir in the fish sauce, brown sugar, and lime juice. Cook for an additional 2 minutes.

  5. Serve the curry over rice and garnish with fresh cilantro.
