Ingredients

  • 2 cups of cooked white rice
  • 1 pound of boneless, skinless chicken breast, sliced into small pieces
  • 1 red bell pepper, sliced into thin strips
  • 1 green bell pepper, sliced into thin strips
  • 1 cup of sliced mushrooms
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 tablespoon of vegetable oil
  • 1/2 cup of teriyaki sauce
  • Salt and pepper, to taste

Instructions

  1. In a large skillet, heat the vegetable oil over medium-high heat.

  2. Add the sliced chicken and cook until browned and cooked through, about 5-7 minutes.

  3. Move the chicken to the side of the skillet and add the diced onion and minced garlic. Cook for 1-2 minutes until the onion softens.

  4. Add the sliced bell peppers and mushrooms to the skillet and cook until the vegetables begin to soften, about 3-5 minutes.

  5. Pour the teriyaki sauce over the chicken and vegetables and stir to coat everything evenly.

  6. Serve the teriyaki chicken and vegetables over a bed of cooked white rice.
