How To Make Dorayaki Ice Cream Sandwich Recipe

Ingredients

  • 1 cup of all-purpose flour
  • 1 tsp of baking powder
  • 2 eggs
  • 1/3 cup of granulated sugar
  • 1 tbsp of honey
  • 1 tsp of vanilla extract
  • 1/4 cup of milk
  • 8 scoops of ice cream (flavor of your choice)

Instructions

  1. In a mixing bowl, combine the flour and baking powder. Set aside.

  2. In another bowl, whisk the eggs and sugar until pale and frothy.

  3. Add the honey and vanilla extract to the egg mixture, and mix until well combined.

  4. Gradually add the flour mixture to the egg mixture, while alternating with the milk until a smooth batter forms.

  5. Heat a non-stick pan over medium heat.

  6. Pour about 1/4 cup of batter onto the pan, and cook for 1-2 minutes until bubbles form on the surface. Flip and cook for another 30 seconds until lightly golden.

  7. Repeat the process with the remaining batter, until 8 pancake discs are formed.

  8. Sandwich each pancake disc with a scoop of ice cream in the center.

  9. Wrap each sandwich with plastic wrap and freeze for at least 1 hour before serving.

  10. To serve, unwrap each sandwich and enjoy the sweet and cold treat.
