How To Make Melon Pan Recipe

A sweet Japanese bread with a crispy cookie crust resembling a melon.

Serves:

Ingredients

  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 1 egg
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp whole milk
  • 1 egg yolk
  • 1 tbsp water
  • Granulated sugar for sprinkling

Instructions

  1. In a bowl, cream butter and sugar. Add egg and mix well.

  2. In another bowl, combine flour, baking powder and salt.

  3. Gradually mix dry ingredients into wet mixture, alternating with milk.

  4. Divide into 8 portions, shape into balls and chill for 15 minutes.

  5. Mix egg yolk and water to make an egg wash.

  6. Score cookie crust into a diamond pattern.

  7. Brush with egg wash and add sugar on top.

  8. Bake at 350°F for 25 minutes or until golden brown.
