How To Make Healthy Spaghetti Bolognese

Ingredients

  • 8 oz whole wheat spaghetti
  • 1 lb lean ground turkey
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, grated
  • 1 zucchini, grated
  • 1 can (14 oz) crushed tomatoes
  • 1 tbsp tomato paste
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves for garnish

Instructions

  1. Cook the whole wheat spaghetti according to package instructions. Drain and set aside.

  2. In a large skillet, cook the ground turkey over medium heat until no longer pink. Break it up into crumbles as it cooks.

  3. Add the diced onion and minced garlic to the skillet and cook until the onion is translucent.

  4. Stir in the grated carrot and zucchini, and cook for an additional 2 minutes.

  5. Add the crushed tomatoes, tomato paste, dried oregano, dried basil, and salt and pepper to taste. Stir well to combine.

  6. Reduce the heat to low and let the sauce simmer for 15-20 minutes, allowing the flavors to meld together.

  7. Serve the spaghetti topped with the turkey Bolognese sauce. Sprinkle with grated Parmesan cheese and garnish with fresh basil leaves.
