Preparation: 15 minutes
Cooking: 30 minutes
Total: 45 minutes

Serves:

Ingredients

  • 1 1/2 cups cooked ham, diced
  • 1 cup frozen peas
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1/2 cup milk
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 sheet frozen puff pastry, thawed
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large skillet, melt the butter over medium heat. Add the onion and garlic, and cook until softened, about 5 minutes.

  3. Add the flour to the skillet and cook for 1 minute, stirring constantly.

  4. Slowly whisk in the chicken broth and milk until smooth and thickened.

  5. Stir in the diced ham, frozen peas, dried thyme, salt, and pepper.

  6. Cook for an additional 5 minutes, until the peas are heated through.

  7. Transfer the mixture to a 9-inch pie dish.

  8. Roll out the puff pastry sheet to fit the top of the pie dish. Place it over the filling, pressing the edges to seal.

  9. Brush the surface of the pastry with the beaten egg.

  10. Make a few small slits in the pastry to allow steam to escape.

  11. Bake for 25-30 minutes, or until the pastry is golden brown and the filling is bubbly.

  12. Allow the pot pie to cool for a few minutes before serving.
