- 1 1/2 cups cooked ham, diced
- 1 cup frozen peas
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup chicken broth
- 1/2 cup milk
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 sheet frozen puff pastry, thawed
- 1 egg, beaten (for egg wash)
Instructions
-
Preheat the oven to 400°F (200°C).
-
In a large skillet, melt the butter over medium heat. Add the onion and garlic, and cook until softened, about 5 minutes.
-
Add the flour to the skillet and cook for 1 minute, stirring constantly.
-
Slowly whisk in the chicken broth and milk until smooth and thickened.
-
Stir in the diced ham, frozen peas, dried thyme, salt, and pepper.
-
Cook for an additional 5 minutes, until the peas are heated through.
-
Transfer the mixture to a 9-inch pie dish.
-
Roll out the puff pastry sheet to fit the top of the pie dish. Place it over the filling, pressing the edges to seal.
-
Brush the surface of the pastry with the beaten egg.
-
Make a few small slits in the pastry to allow steam to escape.
-
Bake for 25-30 minutes, or until the pastry is golden brown and the filling is bubbly.
-
Allow the pot pie to cool for a few minutes before serving.
