How To Make Leek, Mushroom & Goat’s Cheese Strudels

Ingredients
- 2 leeks, thinly sliced
- 8 oz mushrooms, sliced
- 4 oz goat’s cheese, crumbled
- 1 tbsp olive oil
- 1 tsp dried thyme
- Salt and pepper to taste
- 4 sheets of phyllo pastry
- 4 tbsp melted butter
Instructions

Preheat the oven to 375°F (190°C).

In a large pan, heat the olive oil over medium heat. Add the leeks and mushrooms, and cook until softened, about 5 minutes. Season with thyme, salt, and pepper. Remove from heat and let cool slightly.

Lay out one sheet of phyllo pastry and brush with melted butter. Top with another sheet and repeat the process until you have 4 layers of phyllo pastry.

Spoon the leek and mushroom mixture onto the phyllo pastry, leaving a border around the edges. Sprinkle with crumbled goat’s cheese.

Carefully roll up the strudel, tucking in the sides as you go. Brush the top with melted butter.

Place the strudels on a baking sheet and bake for 20-25 minutes until golden brown and crispy.

Let cool slightly before serving. Cut into slices and serve warm.
