Ingredients

  • 6 eggs
  • 1 cup fresh spinach, chopped
  • 4 oz smoked salmon, thinly sliced
  • 1/4 cup diced red onion
  • 1/4 cup diced bell pepper
  • 1/4 cup grated Parmesan cheese
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • cooking spray

Instructions

  1. Preheat the oven to 375°F (190°C). Spray a muffin tin with cooking spray.

  2. In a large bowl, whisk the eggs until well beaten.

  3. Add the chopped spinach, smoked salmon, diced red onion, diced bell pepper, Parmesan cheese, salt, and black pepper to the bowl. Stir until all ingredients are evenly combined.

  4. Divide the mixture evenly among the muffin cups, filling each about 3/4 full.

  5. Bake in the preheated oven for 20 minutes, or until the muffins are set and golden on top.

  6. Remove from the oven and allow to cool for a few minutes before removing the muffins from the tin.

  7. Serve warm or at room temperature.
