Ingredients
- 4 chicken breasts, boneless and skinless
- 2 tbsp vegetable oil
- 1 onion, diced
- 1 green bell pepper, diced
- 2 celery stalks, diced
- 3 cloves of garlic, minced
- 2 tbsp all-purpose flour
- 1 can (14.5 oz) diced tomatoes
- 1 cup chicken broth
- 2 tsp Cajun seasoning
- 1 tsp paprika
- 1/2 tsp thyme
- 1/4 tsp cayenne pepper
- Salt and pepper, to taste
- Cooked rice, for serving
- Chopped green onions, for garnish
Instructions

Season the chicken breasts with salt and pepper. In a large skillet, heat the vegetable oil over medium-high heat. Cook the chicken until browned on both sides, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.

In the same skillet, add the diced onion, green bell pepper, celery, and garlic. Cook until the vegetables are softened, about 5 minutes.

Sprinkle the flour over the vegetables and stir well to coat. Cook for an additional 2 minutes.

Add the diced tomatoes, chicken broth, Cajun seasoning, paprika, thyme, and cayenne pepper to the skillet. Stir to combine.

Return the cooked chicken breasts to the skillet, nestling them into the sauce. Reduce the heat to low, cover, and simmer for 25-30 minutes, or until the chicken is cooked through and tender.

Serve the chicken Etouffee over cooked rice. Garnish with chopped green onions.
