Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/2 cup water
  • 1 tablespoon vegetable oil

  • 1 cup mashed potatoes
  • 1 cup sauerkraut
  • 1 cup farmer’s cheese
  • 1 cup fruit preserves
  • for serving:
  • Sour cream
  • Butter
  • Chopped green onions (optional)

Instructions

  1. In a large bowl, mix the flour and salt. Create a well in the center and add the egg, water, and oil. Mix until a dough forms.

  2. Knead the dough on a floured surface for about 5 minutes until it becomes smooth and elastic. Cover and let it rest for 15 minutes.

  3. Roll out the dough to about 1/8 inch thickness. Cut out circles using a round cookie cutter or glass.

  4. Place a spoonful of your desired filling in the center of each dough circle. Fold the circle in half and pinch the edges to seal tightly.

  5. Bring a large pot of salted water to a boil. Cook the pierogi in small batches for about 5-7 minutes or until they float to the surface. Remove with a slotted spoon and transfer to a plate.

  6. If desired, melt butter in a pan and sauté the cooked pierogi until lightly browned.

  7. Serve hot pierogi with a dollop of sour cream, a drizzle of melted butter, and chopped green onions if desired.
