Ingredients
- 1 lb boneless chicken breasts, diced
- 1 lb andouille sausage, sliced
- 1 large onion, chopped
- 1 bell pepper, chopped
- 2 celery stalks, chopped
- 3 cloves of garlic, minced
- 1 can (14 oz) diced tomatoes
- 2 cups chicken broth
- 1 cup long-grain rice
- 2 tsp Cajun seasoning
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1/2 tsp paprika
- 1/2 tsp cayenne pepper
- Salt and black pepper to taste
- Chopped fresh parsley, for garnish
Instructions

In a large pot or Dutch oven, heat some oil over medium heat. Add the chicken and sausage, and cook until browned. Remove from the pot and set aside.

In the same pot, add the onion, bell pepper, celery, and garlic. Sauté until softened.

Add the diced tomatoes, chicken broth, rice, Cajun seasoning, thyme, oregano, paprika, cayenne pepper, salt, and black pepper. Mix well.

Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 20 minutes, or until the rice is cooked and the liquid is absorbed.

Stir in the cooked chicken and sausage. Cook for an additional 5 minutes to heat through.

Serve hot, garnished with chopped fresh parsley.
