Ingredients

  • 2 cups sushi rice
  • 4 cups water
  • 1 cup beef, thinly sliced
  • 2 eggs, beaten
  • 2 tablespoons vegetable oil
  • 4 tablespoons soy sauce
  • 2 tablespoons mirin
  • 2 tablespoons rice vinegar
  • 2 tablespoons sugar
  • 2 teaspoons chili sauce
  • 1 cucumber, sliced
  • 4 green onions, sliced
  • Sesame seeds, for garnish

Instructions

  1. Rinse the sushi rice and cook according to package instructions using 4 cups of water.

  2. While the rice is cooking, heat 1 tablespoon of vegetable oil in a pan over medium heat and cook the beef until browned. Set aside.

  3. In the same pan, add the remaining tablespoon of vegetable oil. Pour in the beaten eggs and scramble until cooked through.

  4. In a small saucepan, combine soy sauce, mirin, rice vinegar, sugar, and chili sauce. Heat over low heat until the sugar has dissolved.

  5. Once the rice is cooked, divide it among 4 bowls. Top with the cooked beef, scrambled eggs, cucumber slices, and green onions.

  6. Drizzle the sauce over the bowls and sprinkle with sesame seeds.

  7. Serve immediately and enjoy!
