Ingredients
- 1 whole chicken (about 3-4 lbs)
- 2 cups jasmine rice
- 4 cups chicken broth
- 1 head garlic, peeled and smashed
- 2-inch piece of ginger, sliced
- 2 tbsp vegetable oil
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp fish sauce
- 1 tbsp sugar
- 1 cucumber, sliced
- 1 sprig cilantro, chopped
Instructions

In a large pot, bring chicken broth, garlic, and ginger to a boil. Add the chicken and poach until cooked through, about 40 minutes.

Remove the chicken from the pot and let it cool. Save the chicken broth for cooking the rice.

Rinse the jasmine rice until the water runs clear. In a rice cooker or pot, cook the rice using the chicken broth from step 2.

While the rice is cooking, carve the chicken into serving pieces.

In a small saucepan, heat the vegetable oil over medium heat. Add the soy sauce, oyster sauce, fish sauce, and sugar. Stir until the sugar is dissolved and the sauce is heated through. Remove from heat.

To serve, place a mound of rice on each plate. Top with pieces of chicken. Drizzle the sauce over the chicken and rice. Garnish with sliced cucumber and chopped cilantro.
