Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 celery stalks, chopped
- 2 carrots, chopped
- 1 cup dried lentils, rinsed
- 4 cups vegetable broth
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp chopped fresh parsley
Instructions

Heat olive oil in a large pot over medium heat.

Add onion and garlic, sauté until soft.

Add celery and carrots, cook for 5 minutes.

Add lentils, broth, cumin, paprika, salt, and black pepper. Bring to a boil.

Reduce heat to low, cover, and simmer for 30 minutes or until lentils are tender.

Stir in parsley and serve hot.
