Ingredients

  • 1lb linguine
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1 shallot, diced
  • 1/2 cup white wine
  • 1/2 cup clam juice
  • 2 cans chopped clams, drained
  • 1/4 cup heavy cream
  • Salt and pepper, to taste
  • Parsley, chopped for garnish

Instructions

  1. Cook linguine according to package instructions until al dente. Reserve 1/2 cup of cooking water before draining.

  2. In a large saucepan, melt butter over medium heat. Add garlic and shallot and cook until fragrant.

  3. Pour in white wine and clam juice. Bring to a simmer and cook for 5 minutes.

  4. Add chopped clams and heavy cream. Let the mixture simmer for 10-12 minutes.

  5. Season with salt and pepper to taste.

  6. Add cooked pasta to the saucepan with the clam sauce, along with the reserved cooking water.

  7. Toss until pasta is completely coated with sauce.

  8. Serve hot, sprinkled with parsley.
