How To Make Richard Blais’s Nitro Popcorn Recipe

A fun and unique take on traditional popcorn, made with liquid nitrogen for a cool and crunchy treat.

Preparation: 5 minutes
Cooking: 5 minutes
Total: 10 minutes

Serves:

Ingredients

  • 1/2 cup popcorn kernels
  • 1/4 cup vegetable oil
  • Salt, to taste
  • Liquid nitrogen (enough to fill a mixing bowl)

Instructions

  1. In a large pot, heat the vegetable oil over high heat.

  2. Add the popcorn kernels to the pot and cover with a lid. Shake the pot constantly until the popping slows down.

  3. Remove the pot from heat and transfer the popcorn to a large bowl.

  4. Season the popcorn with salt to taste.

  5. Ladle enough liquid nitrogen into a separate large mixing bowl to cover the bottom by about 1 inch.

  6. Using tongs, carefully place a small handful of popcorn into the liquid nitrogen for about 10-15 seconds, or until the popcorn is frozen and crunchy.

  7. Remove the popcorn from the liquid nitrogen and let it come to room temperature for a minute before serving.

  8. Repeat with the rest of the popcorn.
