- 1 pound chicken breast, cut into strips
- 1 tbsp olive oil
- 1 tsp paprika
- Salt and pepper to taste
- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 jalapeño pepper, seeded and minced
- 1/4 cup fresh cilantro, chopped
- 1/2 cup toasted corn
- 1/2 cup black beans, drained and rinsed
- Juice of 1 lime
Instructions

Preheat grill to medium-high heat.

In a bowl, toss chicken strips with olive oil, paprika, salt, and pepper.

Grill chicken for 6-8 minutes per side or until cooked through.

In a large salad bowl, combine mixed greens, cherry tomatoes, red onion, jalapeño, cilantro, toasted corn, and black beans.

Toss salad with lime juice.
