A delicious muffin filled with carrots and raisins, perfect for breakfast or a snack.

Ingredients
- 1 1/2 cups flour
- 1/2 cup sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 2 eggs
- 1/2 cup vegetable oil
- 1/2 cup milk
- 1 cup shredded carrot
- 1/2 cup raisins
Instructions
- 
Preheat oven to 375°F. 
- 
In a large bowl, mix together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg. 
- 
In another bowl, whisk together eggs, oil, and milk. Add to dry ingredients and mix until just combined. 
- 
Fold in shredded carrots and raisins. 
- 
Grease muffin tin or line with paper liners. Fill each muffin cup 2/3 full with batter. 
- 
Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. 
- 
Cool in pan for 5 minutes, then remove to a wire rack to cool completely.
