This delicious Hawaiian dish is packed with flavor! It features tender, juicy chicken, marinated in a sweet pineapple sauce and grilled to perfection.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tbsp ketchup
  • 2 cloves garlic, minced
  • 1 tsp ginger, minced
  • 1 tbsp vegetable oil
  • 4 Kings Hawaiian buns
  • Pineapple slices and lettuce for serving

Instructions

  1. In a large bowl, whisk together pineapple juice, soy sauce, brown sugar, ketchup, garlic, and ginger.

  2. Reserve 1/2 cup of the marinade and set aside.

  3. Add the chicken to the bowl and toss to coat in the marinade. Cover and refrigerate for at least 2 hours (or overnight).

  4. Preheat grill to medium-high heat.

  5. Remove chicken from marinade and discard the used marinade.

  6. Brush each chicken breast with vegetable oil and place on the grill.

  7. Cook for 6-8 minutes on each side or until cooked through.

  8. In a small saucepan, heat the reserved marinade over medium heat, stirring occasionally until it thickens.

  9. Serve chicken on Kings Hawaiian buns topped with the thickened marinade, pineapple slices, and lettuce.
