Ingredients

  • 1 lb ground beef
  • 1 cup Panko breadcrumbs
  • 1/2 cup milk
  • 1 egg
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup diced pineapple
  • 1/2 cup brown sugar
  • 1/3 cup apple cider vinegar
  • 1/4 cup ketchup
  • 1 tbsp soy sauce
  • 1 tbsp cornstarch
  • 1 tbsp water
  • 2 scallions, thinly sliced for garnish

Instructions

  1. Preheat oven to 400°F.

  2. In a bowl, mix together ground beef, Panko breadcrumbs, milk, egg, garlic powder, onion powder, salt, and black pepper until well combined.

  3. Roll mixture into 1.5 inch meatballs and place on a baking sheet lined with parchment paper.

  4. Bake for 15-20 minutes until fully cooked.

  5. While the meatballs are cooking, make the sauce: In a medium-sized saucepan, combine diced pineapple, brown sugar, apple cider vinegar, ketchup, and soy sauce. Bring mixture to a boil and reduce heat to low, simmering for 10 minutes.

  6. In a small bowl, whisk together cornstarch and water. Add mixture to the saucepan and stir until the sauce thickens, about 2 minutes.

  7. Add cooked meatballs to the saucepan and toss to coat.

  8. Garnish with thinly sliced scallions before serving.
