Ingredients

  • 1 ripe pineapple, peeled and diced
  • 2 red chili peppers, thinly sliced
  • 1 cup brown sugar
  • 1 cup white vinegar
  • 1 tsp ground ginger
  • 1 tsp ground cumin
  • 1/2 tsp salt

Instructions

  1. In a saucepan, combine the diced pineapple, sliced chili peppers, brown sugar, white vinegar, ground ginger, ground cumin, and salt.

  2. Bring the mixture to a boil over medium heat, stirring constantly.

  3. Reduce the heat to low and simmer for 30 minutes, or until the chutney has thickened.

  4. Remove from heat and let cool before serving.

  5. Store in sterilized jars in the refrigerator for up to 2 weeks.
