Ingredients
- 1 cup of yellow cornmeal
- 1/2 cup of all-purpose flour
- 1 tbsp of baking powder
- 1/2 tsp of salt
- 2 large eggs
- 1 cup of buttermilk
- 1/4 cup of vegetable oil
Instructions

Preheat oven to 425°F and grease an 8-inch cast-iron skillet or baking dish.

In a large mixing bowl, whisk together the cornmeal, flour, baking powder, and salt.

In a separate bowl, beat the eggs and then add in the buttermilk and vegetable oil, mixing well.
