  • 1/2 cup unsalted butter, softened
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup white chocolate chips
  • 1/2 cup macadamia nuts, chopped

Instructions

  1. Preheat the oven to 350°F (180°C).

  2. In a mixing bowl, cream the butter and sugars together until light and fluffy.

  3. Beat in the egg and vanilla extract.

  4. In another bowl, whisk together the flour, baking soda, and salt.

  5. Slowly add the dry ingredients to the butter mixture, mixing until just combined.

  6. Stir in the white chocolate chips and macadamia nuts.

  7. Using a cookie scoop or rounding tablespoons, drop spoonfuls of dough onto a baking sheet lined with parchment paper.

  8. Bake for 10-12 minutes or until the edges are lightly golden brown.

  9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
