How To Make Dots Raspberry Thumbprint Cookies Recipe

Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1 egg yolk
  • 1/2 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1/4 tsp salt
  • 1/4 cup raspberry jam

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a large bowl, cream together the butter and sugar.

  3. Add in the egg yolk and vanilla extract, mix until combined.

  4. Add in the flour and salt, mix until a dough forms.

  5. Using a small cookie scoop, form the dough into balls and place them onto the prepared baking sheet.

  6. Using your thumb or the back of a teaspoon, press a small indent into the center of each cookie.

  7. Fill each indent with a small amount of raspberry jam.

  8. Bake for 10-12 minutes or until lightly golden on the edges.

  9. Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
