Moist, fluffy cupcakes with a rich red velvet flavor and sweet cream cheese frosting.
Serves:
Ingredients
- 1 cup of flour
- 1 tsp of baking soda
- 1/2 tsp of salt
- 1/3 cup of butter, softened
- 3/4 cup of sugar
- 1 egg
- 1 tsp of vanilla extract
- 1/2 cup of buttermilk
- 1 tbsp of red food coloring
- cream cheese frosting:
- 4 oz of cream cheese
- 1/4 cup of butter, softened
- 2 cups of powdered sugar
- 1 tsp of vanilla extract
Instructions

Preheat oven to 350°F. Line muffin tin with cupcake liners.

In a bowl, mix together flour, baking soda, and salt.

In a separate bowl, cream butter and sugar until light and fluffy.

Beat in egg and vanilla extract.

Gradually add in dry ingredients and buttermilk, alternating between the two until just combined.

Add in red food coloring and mix until evenly colored.

Pour batter into liners until they are 2/3 full.

Bake for 18-20 minutes, or until a toothpick inserted into center of a cupcake comes out clean.

Let cupcakes cool completely before frosting.

In a mixing bowl, cream together cream cheese and butter until smooth.

Slowly add in powdered sugar and vanilla extract until the mixture is creamy and spreadable.
