Ingredients

  • 2 chicken breasts, cooked and shredded
  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 cup cucumber, sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 2 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the shredded chicken, mixed greens, cherry tomatoes, red onion, cucumber, and parsley.

  2. In a separate bowl, whisk together the mayonnaise, Greek yogurt, lemon juice, Dijon mustard, salt, and pepper.

  3. Pour the dressing over the salad and toss to coat.
