How To Make Chi-Chi’s Tortilla Soup Recipe
A warm and hearty soup made with tender chicken, seasoned broth, and crispy tortilla strips.
Serves:
Ingredients
- 2 tbsp vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 4 cups chicken broth
- 1 (14.5 oz) can diced tomatoes, drained
- 1 cup cooked chicken, shredded
- 1 cup corn kernels
- 1 (4 oz) can green chilies, chopped
- 8-10 corn tortillas, cut into strips
- Salt and pepper, to taste
- 1 avocado, diced
- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges
Instructions

Heat the oil in a large pot over medium-high heat. Add the onion and sauté until softened, about 5 minutes.

Add the garlic, cumin, and chili powder and cook for another minute.

Pour in the chicken broth and diced tomatoes. Bring to a boil, then reduce the heat and let simmer for 10 minutes.

Add the cooked chicken, corn, and green chilies. Simmer for another 10 minutes.

While the soup is simmering, preheat the oven to 400°F. Spread the tortilla strips on a baking sheet and bake until crispy, about 10 minutes.

Season the soup with salt and pepper to taste.

Ladle the soup into bowls and top with the crispy tortilla strips, diced avocado, and chopped cilantro. Serve with lime wedges on the side.
