Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 1/4 cup granulated sugar
  • 1 tsp salt
  • 1/4 tsp cayenne pepper
  • 1 can corn kernels, drained
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 egg, beaten

Instructions

  1. Preheat oven to 375°F. Grease 8-inch square baking dish.

  2. In a large bowl, whisk together cornmeal, flour, baking powder, sugar, salt, and cayenne pepper.

  3. Stir in corn kernels and cheddar cheese.

  4. In another bowl, whisk together milk, oil, and egg.

  5. Add wet ingredients to dry ingredients and stir until just combined.

  6. Pour batter into prepared baking dish and bake for 25 minutes or until golden brown.

  7. Serve warm.
