How To Make Chi-Chi’s Chicken Fajitas Recipe

Sizzling chicken fajitas with bell peppers, onions, and a zesty marinade served with warm tortillas and all the fixings.

Preparation: 20 minutes
Cooking: 15 minutes
Total: 35 minutes

Serves:

Ingredients

  • 1 lb boneless, skinless chicken breast, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow onion, sliced
  • 1/4 cup vegetable oil
  • 2 tbsp lime juice
  • 2 tbsp Worcestershire sauce
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 8-10 flour tortillas
  • Optional toppings: shredded cheese, sour cream, guacamole, salsa

Instructions

  1. In a large bowl, whisk together the vegetable oil, lime juice, Worcestershire sauce, chili powder, cumin, garlic powder, and salt.

  2. Add the sliced chicken to the bowl and toss to coat in the marinade. Allow to marinate for at least 10 minutes.

  3. Heat a large skillet over high heat. Add the sliced bell peppers and onions to the skillet and cook, stirring occasionally, until softened and slightly charred, about 5-8 minutes. Remove from the skillet and set aside.

  4. In the same skillet, cook the marinated chicken over high heat until browned and cooked through, about 5-7 minutes.

  5. To serve, warm the flour tortillas in the microwave or on a griddle. Fill each tortilla with a scoop of the cooked chicken and vegetable mixture. Top with shredded cheese, sour cream, guacamole, and/or salsa, if desired.
