How To Make Chi-Chi’s Cheese Enchiladas Recipe

Delicious and cheesy enchiladas made with Chi-Chi’s Sauce.

Preparation: 20 minutes
Cooking: 25 minutes
Total: 45 minutes



  • 8 corn tortillas
  • 2 cups of shredded Colby Jack cheese
  • 1/4 cup of diced onion
  • 1/4 cup of chopped fresh cilantro
  • 1 can of Chi-Chi’s Enchilada Sauce


  1. Preheat oven to 350°F.

  2. Pour a small amount of the enchilada sauce into the bottom of a 9×13 inch baking dish.

  3. Soften the tortillas by placing them in the microwave for 20 seconds or heating them on the stove top.

  4. Spoon about 1/4 cup of cheese down the center of each tortilla and roll them up to enclose the cheese.

  5. Place the enchiladas seam side down in the baking dish.

  6. Pour the remaining sauce over the enchiladas and sprinkle with the remaining cheese.

  7. Bake for 20-25 minutes or until cheese is melted and bubbly.

  8. Garnish with diced onion and cilantro.
