How To Make Chi-Chi’s Chicken Chimichangas

Serves:
Ingredients
- 1 lb chicken breast, shredded
- 1 tbsp olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- 1/2 cup chicken broth
- 8 flour tortillas
- 1/2 cup shredded cheddar cheese
- Oil for frying
- Optional toppings: sour cream, guacamole, salsa
Instructions

Heat olive oil in a pan over medium heat. Add onion and garlic, cook for 2 minutes.

Add shredded chicken, chili powder, cumin, paprika, salt, and pepper. Cook for 5 minutes.

Add chicken broth and simmer for 3-5 minutes until the liquid has reduced.

Lay tortillas flat and spoon chicken mixture into each tortilla. Sprinkle cheddar cheese on top.

Roll each tortilla tightly, tucking in the ends to make a burrito shape.

Heat oil in a deep fryer or large pot to 375°F. Fry the chimichangas until golden brown (around 2-3 minutes each).
