How To Make Baja Fresh Tortilla Soup Recipe
A hearty soup filled with tender chicken, crisp vegetables, and savory spices.

Ingredients
- 6 cups of chicken stock
 - 1 small red onion, diced
 - 1 red bell pepper, diced
 - 1 green bell pepper, diced
 - 1 jalapeno, seeded and minced
 - 1 can of black beans, drained and rinsed
 - 1 cup of corn kernels
 - 2 tbsp of tomato paste
 - 2 tsp of cumin
 - 1 tsp of chili powder
 - Salt and pepper to taste
 - 2 cups of shredded cooked chicken
 - Tortilla chips, for serving
 - Lime wedges, for serving
 - Fresh cilantro, for garnish
 
Instructions
- 
In a large pot, bring the chicken stock to a simmer.
 - 
Add the diced red onion, red and green bell pepper, and jalapeno to the pot and let cook for 5-7 minutes until softened.
 - 
Stir in the black beans, corn kernels, tomato paste, cumin, and chili powder.
 - 
Season with salt and pepper to taste.
 - 
Let the soup simmer for another 10-15 minutes until the vegetables are tender.
 - 
Stir in the shredded cooked chicken and let cook for an additional 5 minutes.
 - 
Serve the soup hot with tortilla chips on top, lime wedges on the side, and fresh cilantro for garnish.
