How To Make Baja Fresh Chicken Enchiladas Recipe
Savory and cheesy, our Baja Fresh Chicken Enchiladas Recipe is a delicious way to spice up your dinner.
Serves:
Ingredients
- 2 cups of cooked chicken, shredded
- 1 tablespoon of olive oil
- 1 onion, chopped
- 1 can of black beans, drained and rinsed
- 1 can of diced green chilies
- 1 cup of enchilada sauce
- 1 cup of shredded cheddar cheese
- 8 corn tortillas
- Salt and pepper to taste
Instructions

Preheat oven to 375°F.

Heat olive oil in a skillet over medium-high heat, and sauté onions until tender.

Add shredded chicken, black beans, green chilies, enchilada sauce, salt and pepper into the skillet, mix well.

Warm up the corn tortillas.

In a large baking dish, spoon some of the chicken mixture onto each tortilla, and roll up. Place each enchilada seam-side down into the dish.

Cover enchiladas with remaining sauce and sprinkle with shredded cheese.

Bake for 20-25 minutes, or until cheese is melted and bubbly.
