How To Make Baja Fresh Chicken Enchiladas Recipe

Savory and cheesy, our Baja Fresh Chicken Enchiladas Recipe is a delicious way to spice up your dinner.

  • 2 cups of cooked chicken, shredded
  • 1 tablespoon of olive oil
  • 1 onion, chopped
  • 1 can of black beans, drained and rinsed
  • 1 can of diced green chilies
  • 1 cup of enchilada sauce
  • 1 cup of shredded cheddar cheese
  • 8 corn tortillas
  • Salt and pepper to taste


  1. Preheat oven to 375°F.

  2. Heat olive oil in a skillet over medium-high heat, and sauté onions until tender.

  3. Add shredded chicken, black beans, green chilies, enchilada sauce, salt and pepper into the skillet, mix well.

  4. Warm up the corn tortillas.

  5. In a large baking dish, spoon some of the chicken mixture onto each tortilla, and roll up. Place each enchilada seam-side down into the dish.

  6. Cover enchiladas with remaining sauce and sprinkle with shredded cheese.

  7. Bake for 20-25 minutes, or until cheese is melted and bubbly.
