How To Make Easy Chicken Enchiladas

Ingredients
- 2 cups cooked chicken, shredded
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup onion, diced
- 1/2 cup bell pepper, diced
- 1 can (10 oz) enchilada sauce
- 1/4 cup sour cream
- 8 small tortillas
- Salt and pepper to taste
- Optional toppings: diced tomatoes, sliced avocado, cilantro
Instructions

Preheat the oven to 375°F (190°C) and grease a baking dish.

In a large bowl, combine the cooked chicken, shredded cheese, diced onion, diced bell pepper, enchilada sauce, sour cream, salt, and pepper. Mix well.

Place a spoonful of the chicken mixture onto each tortilla and roll it up tightly. Place the filled tortillas seam side down in the baking dish.

Pour any remaining enchilada sauce over the top of the rolled tortillas. Sprinkle with additional cheese if desired.

Bake in the preheated oven for 25-30 minutes, or until the enchiladas are heated through and the cheese is melted and bubbly.

Serve the chicken enchiladas hot, topped with diced tomatoes, sliced avocado, and fresh cilantro if desired.
