Ingredients

  • 12 corn tortillas
  • 2 cups of cooked shredded chicken
  • 1 cup of chicken broth
  • 1 pound of tomatillos, husks removed
  • 1 small onion, chopped
  • 2 cloves of garlic
  • 1 jalapeno pepper, seeded and diced
  • 1/2 cup of fresh cilantro leaves
  • 1 tablespoon of lime juice
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 cup of shredded Mexican blend cheese
  • Sour cream and fresh cilantro, for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a blender or food processor, combine the tomatillos, onion, garlic, jalapeno, cilantro, lime juice, salt, and black pepper. Blend until smooth.

  3. In a small saucepan, heat the chicken broth over medium heat. Add the green sauce mixture and simmer for 10 minutes.

  4. Heat the tortillas in a dry skillet or in the microwave until pliable.

  5. Dip each tortilla into the green sauce, coating both sides. Place a spoonful of shredded chicken in the center of each tortilla and roll up tightly. Place the enchiladas seam side down in a baking dish.

  6. Pour any remaining green sauce over the enchiladas and sprinkle with the shredded cheese.

  7. Bake for 20 minutes, or until the cheese is melted and bubbly.

  8. Serve the enchiladas garnished with sour cream and fresh cilantro.
