A classic Mexican dish made with tortillas filled with shredded chicken, covered in a creamy tomatillo sauce and topped with melted cheese.

Ingredients

  • 8 corn tortillas
  • 2 cups cooked and shredded chicken
  • 1 cup tomatillo salsa
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 1/2 tsp ground cumin
  • Salt and pepper to taste
  • 1 cup shredded queso blanco or Monterey Jack cheese
  • Chopped fresh cilantro for garnish

Instructions

  1. Preheat the oven to 350°F.

  2. Warm the tortillas in the preheated oven until soft and pliable, about 5 minutes.

  3. In a medium saucepan, combine the tomatillo salsa, sour cream, heavy cream, cumin, salt, and pepper. Cook over medium heat until heated through.

  4. Spread a heaping tablespoon of the sauce on each tortilla. Add the shredded chicken on top of the sauce and roll the tortilla tightly.

  5. Place the rolled tortillas seam-side down in a baking dish. Pour the remaining sauce over the enchiladas and sprinkle with shredded cheese.

  6. Bake the enchiladas in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.

  7. Garnish with chopped cilantro and serve hot.
