How To Make Pedro Mexican Restaurante Enchiladas Suizas Recipe
A classic Mexican dish made with tortillas filled with shredded chicken, covered in a creamy tomatillo sauce and topped with melted cheese.

Ingredients
- 8 corn tortillas
- 2 cups cooked and shredded chicken
- 1 cup tomatillo salsa
- 1/2 cup sour cream
- 1/2 cup heavy cream
- 1/2 tsp ground cumin
- Salt and pepper to taste
- 1 cup shredded queso blanco or Monterey Jack cheese
- Chopped fresh cilantro for garnish
Instructions

Preheat the oven to 350°F.

Warm the tortillas in the preheated oven until soft and pliable, about 5 minutes.

In a medium saucepan, combine the tomatillo salsa, sour cream, heavy cream, cumin, salt, and pepper. Cook over medium heat until heated through.

Spread a heaping tablespoon of the sauce on each tortilla. Add the shredded chicken on top of the sauce and roll the tortilla tightly.

Place the rolled tortillas seam-side down in a baking dish. Pour the remaining sauce over the enchiladas and sprinkle with shredded cheese.

Bake the enchiladas in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
