How To Make Coconut Oil Fried Rice Recipe

Ingredients
- 2 cups cooked white rice
- 2 tablespoons coconut oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 teaspoon ginger, grated
- 1 red bell pepper, chopped
- 1 cup frozen peas and carrots
- 2 tablespoons soy sauce
- Salt and pepper to taste
- Optional: 2 green onions, chopped for garnish
Instructions

In a large skillet, heat up coconut oil over medium-high heat.

Add onion, garlic, ginger, and red bell pepper and sauté for 3-4 minutes.

Add peas and carrots, salt, and pepper and sauté another 2-3 minutes.

Add rice and soy sauce, and stir to combine.

Cook for 5-7 minutes or until the rice is heated through.

Serve hot with chopped green onions, if desired.
