How To Make Nasi Lemak

A classic Malaysian dish consisting of fragrant coconut rice served with a variety of condiments.

Serves:

Ingredients

  • 2 cups of jasmine rice
  • 1 cup of coconut milk
  • 2 pandan leaves
  • 1 lemongrass, bruised
  • 1 inch ginger, sliced
  • 1 tsp of salt
  • 4 pieces of fried chicken
  • 4 hard-boiled eggs
  • 1 cucumber, sliced
  • 1 cup of roasted peanuts
  • Sambal chili paste, to taste

Instructions

  1. Rinse the jasmine rice until the water runs clear. Drain well.

  2. In a pot, combine the rice, coconut milk, pandan leaves, lemongrass, ginger, and salt. Cook on low heat until the rice is cooked and fluffy.

  3. While the rice is cooking, fry the chicken until golden and crispy.

  4. Serve the nasi lemak with a piece of fried chicken, hard-boiled egg, cucumber slices, roasted peanuts, and a dollop of sambal chili paste.
